Onion Paratha

Method:
Preparing the dough:
1. In a mixing bowl, combine the whole wheat flour and a pinch of salt.
2. Gradually add water and knead the mixture into a smooth, soft dough.
3. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Making the onion filling:
1. In a separate bowl, combine the finely chopped onions, green chillies, cumin seeds, red chilli powder, garam masala, turmeric powder, coriander powder, chopped coriander leaves, and salt.
2. Mix everything well and let it sit for a few minutes to allow the flavours to meld together.
Assembling the Parathas:
1. Divide the rested dough into equal-sized balls, slightly smaller than a golf ball.
2. Take one dough ball and roll it into a small disc, about 3 inches in diameter.
3. Place a generous spoonful of the onion filling (about 2–3 tablespoons) in the centre of the disc.
4. Gather the edges of the dough and pinch them together to seal the filling inside.
5. Flatten the filled dough ball slightly with your fingers.
Cooking the Parathas:
1. Heat a griddle or tava over medium-high heat.
2. Once hot, place the stuffed dough ball onto the griddle.
3. Cook for a minute or so until you see small bubbles forming on the surface.
4. Flip the paratha and drizzle a little ghee or oil on the cooked side.
5. Flip it again and repeat the process, spreading ghee or oil on the other side as well.
